

A Spinach recipe for Christina’s mom
Spinach and Feta Quiche with a Potato Crust Recipe |

Cooking time: 45 minutes
Ingredients
3/4 cup chopped frozen spinach
2 Idaho potatoes, sliced 1/4-inch thick
3/4 cup egg substitute
1 1/2 cup skim milk
1/4 teaspoon ground nutmeg
salt to taste
freshly ground black pepper
3/4 cup chopped artichoke hearts
1/2 cup feta cheese
1 teaspoon olive oil
Cooking Instructions
1. Preheat the oven to 325ºF.
2. Place the spinach in a fine mesh strainer and drain off as much liquid as possible. Set aside.
3. In a medium mixing bowl, whisk the egg substitute, milk, nutmeg, salt and pepper together. Set aside.
4. Heat the olive oil in a large, oven proof, nonstick skillet over medium heat. Arrange the potato slices in overlapping concentric circles on the bottom and sides of the pan. Fill in any holes with slices of potato and sprinkle with salt and pepper. Cook, without turning the potatoes, until they begin to turn golden brown on the edges, about 8 to 10 minutes. Remove from heat.
5. Spread the drained spinach over the potatoes in the pan. Sprinkle the artichokes and feta cheese over the spinach. Carefully pour the egg mixture over the vegetables and cheese.
6. Bake for 45 minutes or until a paring knife inserted in the center comes out clean. Remove from oven and allow to stand for at least 10 minutes before slicing.

*giggles* We’re waiting Mom….
I see direction number 2 coming around and Mom goes “Ooops… I was draining the spinach and it all fell in the sink. Guess I can’t make it now. Shucks!”

Ewwwwwwwwww!! Yucky, yucky -not goin’ in MY tummy.

Reminds me of being a young teen when Mom decided she was going to force us to eat something whether we liked it or not – she was fed up with the pickiness. Unfortunately, for me, she fixed beef broth or boullion(??). Whatever it was, it was NOT good. In the years since, me and my sisters have always referred to it as “weiner water”, you know, the water you boil hot dogs in.
So as Mom’s doing dishes and I’m still stuck at the table, she tells me I better be finished by the time she’s done. So as she’s finishing up, washing stove and counters, I take my bowl to the sink and pour a little bit in to make sure it’s not going to turn the dish water brown, which it didn’t so I dunked the whole bowl in the water. To my horror, it then DID turn the water a little brown. So I swished it around and Mom never noticed. Shwewwww, got out of that one.
